Fresh vegetables from the snow, harvested in Austrian fields at sub-zero temperatures: Carrots, radishes, lettuces, leeks and parsley defy winter and frost. Contrary to popular belief, they can be sown and harvested from October to March. Winter vegetables fresh from the field are not only more sustainable, but also more robust and aromatic than greenhouse vegetables. Wolfgang Palme, Höhere Bundeslehr- und Forschungsanstalt für Gartenbau Schönbrunn, and AIT Bioresources expert Eva Maria Sehr, Center for Health & Bioresources, explain the protective mechanisms of winter vegetables.
